1 cup bran (60 g) 1 cup flour (130 g) 1 egg 1/4 c butter (50g) 1 cup brown sugar (100g) 1 cup buttermilk (250ml) 1 teaspoon baking soda dissolved in buttermilk salt 1 tsp vanilla (un sachet de sucre vanillé)

Mix dry ingredients (bran, flour, brown sugar, salt and vanilla sugar). Make a well and add the egg, milk and oil to the well (and vanilla if using liquid). Mix until just blended. Do NOT overmix. Bake in paper muffin cups or muffin tin for 15 minutes. If not ready, reduce heat to 180° for remaining time. N.B. I have added equivalent measures that I measured myself in the kitchen. It's also possible to find a cup measure and use that (1 cup = 250ml). Buttermilk is "lait fermenté". You can buy it at the grocery store (also called yorik, lait ribot,..) or use sour milk. You can also make your own, which is what I do. I put a small yogurt in my measuring cup and complete with milk. Stir and you have buttermilk. Brown sugar is NOT sucre roux. It's thick dark sugar that goes by different names (demarera, muscovado, sucre complet,..).
