1 small onion 1 medium zucchini 2 large tomatoes or a tin 200g grated cheese 2 tablespoons flour 2 tablespoons butter or margarine 1 tablespoon mustard pinch of cayenne pepper (or normal pepper) 1/2 cup of beer (not a whole bottle!) bread

Chop the onion. Grate the zucchini or cut in very thin strips. Chop the tomatoes, if you're using fresh ones. Tinned tomatoes or tomato sauce work just as well. If using a tin or jar of tomatoes, add it once the zucchini and onions are cooked. Saute the veggies. Prepare the cheese sauce over very low heat! In a pot, put the cheese, flour, butter (or margarine) and mustard. Cook over low heat, stirring constantly until the cheese melts. Add the beer and continue stirring until you have a creamy cheese sauce. Pour the cheese sauce over the sauteed vegetables and mix together. Serve over toast or rice or pasta... (or with fresh bread).
