
Broccoli almond soup

Ingrédients
- ~700g broccoli
- 1 onion, chopped
- 1 apple, diced
- 2 tablespoons oil
- 1/2 cup ground almonds
- juice of 1/2 a lemon
- herbs (dill, basil, thyme, ...)
- salt and pepper
- optional: 1 cup milk or cream (or non-dairy milk)
Étapes
- Chop the broccoli florets from the stem. Place them in a large pot with the onion, apple and oil.
- Cover with water or vegetable stock.
- Bring to a boil. Lower the heat and cook for 5 minutes.
- Remove some broccoli to use as a decoration later.
- Continue cooking the soup until the veggies are tender.
- Place the ground almonds in a blender or a bowl if you have a hand mixer.
- Transfer the veggies and pieces of apple from the pot to the blender or bowl (without the liquid).
- Blend until smooth.
- Stir the puree back into the soup.
- Add seasonings and lemon juice.
- Add milk or cream, if desired.
- Serve with the broccoli florets set aside and sliced almonds.
