Ingrédients

  • ~700g broccoli
  • 1 onion, chopped
  • 1 apple, diced
  • 2 tablespoons oil
  • 1/2 cup ground almonds
  • juice of 1/2 a lemon
  • herbs (dill, basil, thyme, ...)
  • salt and pepper
  • optional: 1 cup milk or cream (or non-dairy milk)

Étapes

  1. Chop the broccoli florets from the stem. Place them in a large pot with the onion, apple and oil.
  2. Cover with water or vegetable stock.
  3. Bring to a boil. Lower the heat and cook for 5 minutes.
  4. Remove some broccoli to use as a decoration later.
  5. Continue cooking the soup until the veggies are tender.
  6. Place the ground almonds in a blender or a bowl if you have a hand mixer.
  7. Transfer the veggies and pieces of apple from the pot to the blender or bowl (without the liquid).
  8. Blend until smooth.
  9. Stir the puree back into the soup.
  10. Add seasonings and lemon juice.
  11. Add milk or cream, if desired.
  12. Serve with the broccoli florets set aside and sliced almonds.
