Broccoli Bread Pudding

The simple but deliciously rich way to use broccoli has become a special occasion standard among my family since guests really seem to love it.

Ingrédients

  • 2 tablespoons butter
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 4 cups, finely chopped broccoli, steamed
  • 1 cup sour cream
  • 2 teaspoons mixed dried herbs of your choice, optional
  • Salt and freshly ground pepper to taste
  • 4 eggs, beaten
  • 1/4 cup milk
  • 4 average slices whole grain bread
  • 2 cups grated mild cheese
  • Wheat germ plus sesame seeds for topping

Étapes

  1. Heat the butter in a large skillet until it begins to foam.
  2. Add the onion and garlic and sauté over moderately low heat until the onion is nicely browned.
  3. Add the broccoli, sour cream, herbs, and salt and pepper. Stir together and remove from the heat.
  4. Beat together the eggs and the milk.
  5. Tear the bread into small pieces.
  6. Oil a deep, 9- by 9-inch (23cm by 23cm) (precisely !) casserole dish and layers as follows: half the bread, half the broccoli mixture, half the eggs, and half the cheese. Repeat the layers, then sprinkle with the wheat germ and then the sesame seeds.
  7. Bake for 35-40 minutes, 180°C, or until the top is nicely browned.
