
Bran muffins

Ingrédients
- 1 cup bran (60 g)
- 1 cup flour (130 g)
- 1 egg
- 1/4 c butter (50g)
- 1 cup brown sugar (100g)
- 1 cup buttermilk (250ml)
- 1 teaspoon baking soda dissolved in buttermilk
- salt
- 1 tsp vanilla (un sachet de sucre vanillé)
Étapes
- Mix dry ingredients (bran, flour, brown sugar, salt and vanilla sugar).
- Make a well and add the egg, milk and oil to the well (and vanilla if using liquid).
- Mix until just blended. Do NOT overmix.
- Bake in paper muffin cups or muffin tin for 15 minutes. If not ready, reduce heat to 180° for remaining time.
- N.B. I have added equivalent measures that I measured myself in the kitchen. It's also possible to find a cup measure and use that (1 cup = 250ml).
- Buttermilk is "lait fermenté". You can buy it at the grocery store (also called yorik, lait ribot,..) or use sour milk. You can also make your own, which is what I do. I put a small yogurt in my measuring cup and complete with milk. Stir and you have buttermilk.
- Brown sugar is NOT sucre roux. It's thick dark sugar that goes by different names (demarera, muscovado, sucre complet,..).
